Instructions

- Prep the beef and potatoes. Pat the beef dry and cut into bite size pieces. Halve the baby potatoes so they cook evenly.
- Optional: Parboil the potatoes. If you like softer potatoes, boil them for 4 to 5 minutes, then drain.
- Sear the beef. Heat olive oil in a skillet over medium high heat. Sear the beef in batches until browned. Transfer to the slow cooker.
- Make the garlic butter mixture. In a small bowl, stir together the melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper.
- Build the slow cooker. Add the potatoes to the slow cooker with the beef. Pour the garlic butter mixture over everything. Add the beef broth.
- Cook. Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours, until the beef is tender and the potatoes are soft.
- Taste and adjust seasoning. Add a little more salt and pepper if needed. Let sit uncovered for 5 minutes so the sauce thickens slightly.
- Serve warm with parsley on top and bread on the side.

Use chuck roast, stew meat, or sirloin. Skip very lean cuts because they can dry out.
