Description

Garlic Parmesan Roasted Shrimp: An easy recipe that's delicious and light! Marinate the shrimp in a simple marinade for 1–3 hours, then roast the shrimp for 8–10 minutes! That's it—perfect for a busy weeknight.


Ingredients

  • 4 tbsp extra-virgin olive oil
  • 4 garlic cloves, minced or pressed
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp Kosher salt
  • 1/4 tsp freshly ground black pepper
  • Zest of 1 lemon
  • 2 pounds shrimp, peeled and deveined*
  • 1/2 cup grated Parmesan
  • 2 tbsp chopped flat Italian parsley, for garnish

Instructions

  1. Combine olive oil, garlic, seasonings, and lemon zest in a large glass or plastic bowl. Add shrimp and toss to coat.
  2. Cover with plastic wrap and marinate in the fridge for 1–3 hours.
  3. Preheat oven to 400°F (200°C).
  4. Toss shrimp with the Parmesan in the bowl. Pour onto a 13×9 Pyrex dish or large baking sheet.
  5. Roast for about 8 minutes, or until shrimp are pink, firm, and cooked through.
  6. Garnish with another drizzle of olive oil and chopped parsley.

Notes

We buy frozen shrimp and thaw overnight in the fridge. This recipe is gluten-free, low-carb, and great for busy nights. Adjust marinating time based on schedule—1 hour minimum, 3 hours ideal.
