Garlic Parmesan Roasted Shrimp: An easy recipe that's delicious and light! Marinate the shrimp in a simple marinade for 1–3 hours, then roast the shrimp for 8–10 minutes! That's it—perfect for a busy weeknight.

- 4 tbsp extra-virgin olive oil
- 4 garlic cloves, minced or pressed
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp Kosher salt
- 1/4 tsp freshly ground black pepper
- Zest of 1 lemon
- 2 pounds shrimp, peeled and deveined*
- 1/2 cup grated Parmesan
- 2 tbsp chopped flat Italian parsley, for garnish
Instructions
- Combine olive oil, garlic, seasonings, and lemon zest in a large glass or plastic bowl. Add shrimp and toss to coat.
- Cover with plastic wrap and marinate in the fridge for 1–3 hours.
- Preheat oven to 400°F (200°C).
- Toss shrimp with the Parmesan in the bowl. Pour onto a 13×9 Pyrex dish or large baking sheet.
- Roast for about 8 minutes, or until shrimp are pink, firm, and cooked through.
- Garnish with another drizzle of olive oil and chopped parsley.
Notes
We buy frozen shrimp and thaw overnight in the fridge. This recipe is gluten-free, low-carb, and great for busy nights. Adjust marinating time based on schedule—1 hour minimum, 3 hours ideal.
