- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 cup red wine (Burgundy or Pinot Noir)
- 2 cups beef broth
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 cups carrots, sliced
- 2 cups mushrooms, quartered
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Sear the Beef: In a large skillet, heat olive oil over medium-high heat. Brown beef cubes on all sides, then transfer to the slow cooker.
- Sauté Aromatics: In the same skillet, sauté onions and garlic until softened. Add to the slow cooker.
- Slow Cook: Add carrots, mushrooms, wine, broth, tomato paste, thyme, bay leaf, salt, and pepper. Stir to combine. Cover and cook on low for 8 hours or high for 4 hours, until beef is fork-tender.
- Finish and Serve: Remove bay leaf, garnish with fresh parsley, and serve with crusty bread or creamy mashed potatoes.
Notes
This dish improves even more the next day, so feel free to make it ahead of time. To thicken the sauce slightly, stir in a cornstarch slurry (1 tbsp cornstarch + 2 tbsp cold water) during the last 30 minutes of cooking if desired.
